Banh Mi Bowl with Crispy Tofu

Ingredients + Ratios
1 large cucumber, peeled and diced
3 small carrots, peeled and diced
¼ red cabbage, diced
2 radish, thin sliced
1 jalapeno, thin sliced
2 c cooked brown rice
½ c green onion, sliced thin
2 T chopped cilantro
1 T chopped mint
For the Tofu:
2 14 oz packages extra-firm tofu, cut into small cubes and baked at 375F for 20 minutes, then toss with:
1 T rice wine vinegar
1 T soy sauce
1 T sesame oil
2 t Sriracha
2 cloves garlic, minced
2 T ginger, grated
